Red Velvet Cheesecake Brownies - #Healthyselves look away NOW.


I am the first to admit that i have a terrible diet. If i had the discipline to turn my body into a temple i would. No matter how much exercise i do (which is a fair bit) i just cannot bring myself to tuck into a salad for dinner. Give me CARBS.

I like to try my hand at baking, the usual stuff like cakes and buns. But recently i had a go at Red velvet cheesecake brownies and oh my god. They are amazing. The red part didn't come out too well, so if anyone has any tips on how to actually make the red stand out in chocolate please let me know.

If you want to have a bash at these i've included the recipe below. Enjoy & have a fabulous weekend.

Ingredients

For the Brownies;

  • 2 large eggs
  • 1/2 cup unsalted butter
  • 200g granulated sugar
  • 2 teaspoons vanilla extract
  • 32g cocoa powder
  • 1 pinch of of salt
  • 1 tablespoon of liquid or gel red food colouring
  • 3/4 teaspoon white vinegar
  • 95g all-purpose flour


For the Cheesecake;

  • 224g cream cheese, softened
  • 50g sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract


Instructions

1. Preheat the oven to 180C. Butter a baking pan and set aside.

2. To make the brownie layer, beat 2 eggs together in a small bowl and put to one side.

3. Melt the butter in a microwavable bowl - keep checking it.

4. Stir into the butter, 1 cup of sugar, 2 teaspoons of vanilla extract, the cocoa powder, salt, food colouring and vinegar.

5. Whisk in the eggs.

6. Fold in the flour.

7. Pour the brownie batter into the prepared baking pan, leaving about 3 to 4 tablespoons in the bowl.

8. To make the cheesecake swirl, beat the softened cream cheese with 50g sugar, an egg yolk, and 1/2 teaspoon vanilla extract until completely smooth.

9. Pour the cream cheese mixture on top of the prepared brownie batter.

10. Cover with the last few tablespoons of brownie batter. Glide a skewer through the layers and make some pretty patterns.

11. Bake the brownies for 30 minutes or until a skewer inserted in the middle comes out clean.

12. Allow the brownies to cool completely and then cut into squares. Enjoy!
